To cut a papaya

The papaya is ripe when soft to the touch and fragrant.  It bruises easily so treat it gently.


Cut off the top and bottom, stand it on end, and use a sharp knife to take strips of the skin off, moving from top to bottom and lightly sawing with your knife.

Bisect the fruit and use a teaspoon to remove the seeds.
